Staff Spotlight: Jennifer Erickson – Manager of Food Safety and Compliance, Meridian
Before working at The Idaho Foodbank, what was the most unusual or interesting job you’ve ever had?
Most unusual is as a dishwasher in the Animal Science Research Lab at Georgia – washing rumen fluid out of centrifuge tubes (Rumen fluid is the liquid inside the stomachs of cattle).
Best vacation you’ve been to?
A week in Cape San Blas, Florida, on the Gulf of Mexico with my Dad & step-family. Most relaxing week in my life ever.
What is your WHY, why do you work at The Idaho Foodbank?
Having worked in the food industry since college, I’m aware of the magnitude of food produced in the United States alone. The idea that there are folks who are food insecure in this country is mind boggling and so it has always been important to me to do what I can to help feed people. No one should go hungry. And no one should experience a foodborne illness. When the opportunity arose, I knew my passion for food safety would go hand in hand with our mission.
